This vegetarian hummus arugula pizza is a simple pizza recipe – all you do is add hummus to a pizza crust, top it with fresh tomatoes, bell peppers, arugula, lemon, and a sweet balsamic drizzle. You can mix it up with different toppings, and even use flatbread, naan, or a tortilla instead of the pizza dough!

Description

A simple vegetarian pizza recipe, topped with hummus, vegetables, and a citrusy arugula salad.


Ingredients

Scale
  • 1 pizza crust (or naan, tortilla, flatbread)
  • 2 tsp oil
  • 1/4 cup hummus (amount depends on the size of the pizza)
  • 1/3 cup tomato, sliced or diced
  • 1/3 cup bell pepper, diced
  • 2 handfuls arugula (or spinach)
  • 2 tsp lemon juice, freshly squeezed
  • balsamic reduction for drizzling

Instructions

  1. Brush the pizza crust with 2 tsp oil, then bake or heat the pizza crust according to package instructions. If you’re using naan bread instead, heat it on a pan over the stove until warm and lightly browned. If you’re using a tortilla instead, toast it in the oven at 350F until lightly browned and crispy.
  2. Spread the hummus onto the warm pizza crust.
  3. Top with tomatoes, bell pepper, and arugula (or spinach).
  4. Squeeze the lemon juice over the pizza, then drizzle with a good amount of balsamic reduction.

Notes

For Vegan: Use vegan pizza crust.

For Gluten Free: Use gluten free pizza crust.
